matcha color

Hello everyone! I’m new to matcha. I work at a little family owned coffee shop in the town that I live in. Before I got into matcha I would’ve never thought twice about the color of our matcha, but now that I know a little bit the color alarming to me. First of all, it’s very very dull green. Second, there’s like two layers. I don’t know if the bottom layer is older matcha powder and whoever added the new bad just didn’t rotate them properly or what but from my understanding, matcha should be a vibrant deep green. What’s going on with this matcha and should I tell my boss we shouldn’t be serving it?
